Zucchini Cake

Recipe from Florie Mills via her daughter Katharine Bourgon

Steps:

  1. In a large bowl, beat until foamy:
  • 3 eggs
  • 2 cups white sugar (or 1 7/8 cups brown sugar)
  1. Add & Stir:
  • 1 cup vegetable oil
  • 2 cups grated zucchini (peeled)
  • 1 tsp vanilla
  1. In a separate bowl mix:
  • 2 cups flour
  • 1/2 tsp baking powder
  • 2 tsp baking soda
  • 1 cup raisins and/or nuts (optional)
  • 1 tsp each salt, cinnamon, nutmeg, allspice
  1. Add dry mixture to wet mixture, place into greased cake pan.
  2. Bake at 350F for 50 minutes. Cool before frosting.

Frosting:

  • 125 g cream cheese
  • 1/4 cup butter
  • 1 tsp vanilla
  • 2 cups icing sugar
