Recipe from Florie Mills via her daughter Katharine Bourgon
Steps:
- In a large bowl, beat until foamy:
- 3 eggs
- 2 cups white sugar (or 1 7/8 cups brown sugar)
- Add & Stir:
- 1 cup vegetable oil
- 2 cups grated zucchini (peeled)
- 1 tsp vanilla
- In a separate bowl mix:
- 2 cups flour
- 1/2 tsp baking powder
- 2 tsp baking soda
- 1 cup raisins and/or nuts (optional)
- 1 tsp each salt, cinnamon, nutmeg, allspice
- Add dry mixture to wet mixture, place into greased cake pan.
- Bake at 350F for 50 minutes. Cool before frosting.
Frosting:
- 125 g cream cheese
- 1/4 cup butter
- 1 tsp vanilla
- 2 cups icing sugar
